Lehamim Bakery was established over a decade ago on Carlebach Street in Tel Aviv. Since then, its staff has been bringing the aroma of bread and the pace of activity to the street and the many passersby every day. Work at the bakery starts every night and continues round the clock in a fixed routine with precise rules - the timing, quantities, ratio of ingredients, kneading method, measure of acidity of the sourdough, and raising time. All are maintained with one purpose in mind - to produce exactly the same fine bread with the same appearance, sensation and flavor every day. In 2013, the central bakery in Tel Aviv was joined by a sister bakery adjacent to Union Square in Manhattan, which has also gained enormous success in the Big Apple. The Lehamim chain also operates three sales points in Tel Aviv that receive fresh breads several times a day - at the market in Tel Aviv Port, the Carmel Market and now also at Sarona Market.
